FUTURELIFE® FRUIT CAKE MUFFINS

INGREDIENTS

  • 150 g Cake Fruit Mix 
  • 2 cups Water
  • 2 cups Sugar
  • 250 g Margarine
  • 250 ml Oil
  • 2 teaspoons Bicarb
  • ¾ cup chopped Nuts
  • 200 g whole glace Red Cherries
  • 2 cups Flour
  • 2 cups Chocolate FUTURELIFE® Smart food™
  • 4 teaspoons Baking Powder
  • ¼ teaspoons salt
  • 1 heaped teaspoons Ginger
  • 1 heaped teaspoons Cinnamon
  • 4 Eggs beaten until foamy
  • ½ cup Apple Juice

ICING

  • 200 g Butter
  • 250 g Icing Sugar
  • 250 g Cream Cheese
  • 1 teaspoon Vanilla Essence
  • 1 teaspoon Lemon Juice

METHOD

  1. Preheat oven to 180 C.
  2. Place fruit mix, water, sugar, margarine and oil in a pot and boil. 
  3. Turn down heat and simmer for 5 minutes. 
  4. Allow to cool. 
  5. Add the bicarb, chopped nuts and cherries and mix through.
  6. Sift together the flour, FUTURELIFE® Smart food™, baking powder, salt, ginger and cinnamon and stir into the fruit mixture. 
  7. Add the beaten eggs and mix well. 
  8. Pour mixture into greased muffin trays and bake for 40 minutes.

ICING METHOD

  1. Cream butter and sugar. 
  2. Add other ingredients and blend.
